Nutty Chocolate Slice (raw)

This yummy, healthy, vegan snack is free from gluten, wheat, dairy, soya, egg, and refined sugar. As it is raw, no baking skills are required!

Total Time: 1 hour (preparation only: 15-20 min)

Yield: 12 servings (1 serving = 1 slice)

Ingredients:

200 g (7 oz) ground cashew nuts (can use almonds)

2 med ripe bananas

80 g (3 oz) sultanas

70g (2.5 oz) shelled hemp seed

60 g (2 oz) brown puffed quinoa (can use puffed buckwheat or rice)

50 g (2 oz) pumpkin seeds

50 g (2 oz) cacao butter

30 g (1 oz) ground flax seed

30 g (1 oz) soft dried dates

6 tbs reduced-fat cocoa powder

2 tbs vanilla essence (optional)

30 servings stevia (1 serving stevia = 1 tsp / 5 g sugar)

Directions:

  • It is recommended to soak nuts for a few hours, or overnight, but this is not essential to the recipe (do not soak if bought ground).
  • Combine ground nuts, seeds, sultanas, puffed quinoa, cocoa powder, and stevia.
  • Blend bananas with dates into paste and add to the dry mix.
  • Add cacao butter (melt on low heat first) and knead all the ingredients until the mixture is sticky.
  • Spread the mixture onto a non-stick baking tray (press down and smooth out with a spoon).
  • Refrigerate for 45 min.
  • Cut into 12 slices.
