A simple pleasure…Hummus!

We’ve just moved to Mexico and I’m loving life here…so many fresh fruits and fresh vegetables…yummy!
However, good habits are hard to lose…and why would you want to get rid of a good habit, eh?
I’m used to making hummus 2 or 3 times a week….and today was no different. However, when you move to a new country it can be challenging to find the right ingredients or to ensure that the end result carries the same flavor.
So, I decided to buy some ready-made hummus at the store…just to give it a try and have something to munch on while working at my computer. Well, I wouldn’t say that it was bad but it was certainly far from what I make myself…so I decided to go hummus hunting!
It’s amazing how the Universe leads you to what you need when you know what you want. To cut a long story short, I got all I needed and made my first hummus in Mexico today.
The verdict?
Excellent!
Here is the picture…now by the time I’m done with this little post, let me tell you that it’s all gone…yep, I ate it all!
All you need to make this delicious side dish packed with protein is a food processor. Since my move, I only have my Vitamix, but if you have a small dry bowl it will work equally OK for this dish.
Ingredients
- 1 can of garbanzo beans
- Juice of 1 lemon
- 1 1/2 of garlic
- 2 spoons of tahini
- 1/2 cup of olive oil
- 1/2 cup of sesame oil
- 1 spoon of sesame oil
- Salt and pepper to taste
- Red pepper to decorate
Place all the ingredients into your food processor, but make sure to finely cut the garlic first as you don't want to bite into a big piece of it (yikes!). Pulse and blend….If you think it's too thick then add either a bit of water or a bit of lemon juice.
Serve with a spoon of sesame oil drizzled on top and sprinkle with the red pepper.
