We've just moved to Mexico and I'm loving life here…so many fresh fruits and fresh vegetables…yummy! However, good habits are hard to lose…and why would you want to get rid of a good habit, eh? I'm used to making hummus 2 or 3 times a week….and today was no different. However, when you move to a new country it can be challenging to find the right ingredients or to ensure that the end result carries the same flavor.
Slice finely the 4 zucchini and keep only the firmer and wider slices
Cook them in a pan for 2 minutes on each side until you obtain a golden color
Put all the ingredients into a food processor and pulse until well combined but with some little pieces.
Spread the the artichoke mixture onto each zucchini slice
Roll the zucchini
Place on a plate and decorate as you want
This is a great finger food or can be served as an appetiser.
