Chocolate Coconut Bounty Balls

These Chocolate Coconut bounty balls remind me of childhood, but without being loaded with unhealthy fats and sugar (did you know that a shop-bought mars bounty bar is almost 50% processed sugar, which is enough to severely hamper your immune system for the day, making your body vulnerable to infection).  These balls contain a delicious raw chocolate covering with a sweet white chocolate coconut bounty centre. If you love the combination of milk and white chocolate and coconut then these balls are a must. Not only are they delicious, they are highly nutritious, offering the right balance of chocolate, sweetness and healthy fats from the coconut.

  1. Raw milk chocolate ingredients



    1. Make the white coconut chocolate centre first.
      • Melt the first 3 ingredients in a double boiler until it becomes a smooth white paste.
      • *If you don’t have coconut cream to hand you can use a cold can of coconut milk by scraping the thick cream at the top and discarding the liquid.
      • Add the desiccated coconut and stevia and mix thoroughly.
      • Refrigerate for 10 minutes and then roll into balls and place back in the fridge until the next step is complete.


  1. Make the (raw) milk chocolate.
    • Melt the cacao butter in a double boiler over a low heat trying not to exceed 42° C (if you want to make raw chocolate which retains the nutritional goodness of the chocolate).
    • Ground the sugar
