Apple & Almond Pancakes

These delicious pancakes are free from gluten, wheat, dairy, soya, egg, and refined sugar. They are also great to start your day with, or to snack on, as they are quite filling.

Total Time: 30 minutes

Yield: 4 servings (1 serving = 2 pancakes)


4 med apples (or 1.5 large apples); approx. 400 g (14½ oz) once grated

140 g (5 oz) ground almonds

70 g (2.5 oz) gluten-free oats (can use quinoa, rice, or buckwheat flakes, or mixture)

100 ml (3½ fl oz) coconut milk

1 tbs runny honey

4 tsp (level) tapioca starch (can use potato starch)

12 servings stevia (1 serving stevia = 1 tsp / 5 g sugar)

sunflower oil spray (can use a small amount of coconut oil)


  1. Combine thoroughly grated apples with oats, almond, starch, coconut milk, honey, and stevia, by stirring for a couple of minutes (the consistency of the mixture should be fairly thick).
  2. Coat frying pan with sunflower oil spray (6-8 sprays each time).
  3. Using a ladle, or a tablespoon, apply mixture onto the frying pan. If you use a 20-cm frying pan or greater, you will be able to fit in 4 pancakes at a time (the mixture is sufficient for 8 pancakes in total).
  4. Pan-fry for 3-4 min on each side on very low heat (or until golden brown).
  5. Serve warm.
